Wheat Bread Wednesday

Tasha and I tried out a friends wheat bread recipe last Wednesday. It makes a TON! 5 loaves to be exact, although we could probably reduce that to 4 and make them larger. The thing is, it is the SIMPLEST recipe I have ever tried. I'll be making it again this Wednesday at high noon if anyone is interested in learning, helping, watching, or just eating. (The eating doesn't come until about 2/2:30, but beware, I leave at 3pm to pick Kyra up for school.) Come one, come all... and bring me a loaf pan or 2, I'll even let you take some home.

Here's the recipe...

Amy's (SUPER EASY) Wheat Bread

Dissolve: 3 TBLS yeast into 5 cups of warm water then add:
2/3 cup of oil
2/3 cup of honey
2 TBLS lemon juice
1 TBLS salt
8 cups whole wheat flour
3-4 cups white flour

I add the flour in 2 steps (a half at a time, with the salt in the first half). Knead it. Let it rise. Divide it into 5 parts and place into greased loaf pans. I then placed 2 loaves in the oven, turned it on to 350 and set the timer for 40 minutes. Fabulous! I then took the 2 loaves out, placed the other 3 in (which had risen to the top of the pan by this point), and baked them for 40 minutes.

I KNOW! This doesn't make sense. There is no way to go wrong here. Maybe I'll go into business. What did Sara say a good loaf of bread was going for $2.50?

I need to try this recipe. I think I will try and scale it down, though...

Good job kneading all of it... I have been using my kitchenaid for a long time!!!

Oh, and you forgot to add the corn syrup solids, (actual ingredient in my Fresh and Easy loaf of whole wheat bread...I'd buy yours in a heartbeat!)

Scale all you want but do it by hand! I wrote on the recipe when Amy gave it to me, "the stickier the better, but able to handle it". We mixed most of it in the bowl with a spoon which you can't do with most bread doughs. (And by "we", I mean me and Tasha)

It doesn't sound easy, it is easy. Bring the kids and let them do it!

Wheat Bread Update: I've found that after I add all the flour and get it to the stage that I can kneed it comfortably (adding flour to the surface, and maybe another cup?), it is still pretty sticky. I started using oil on the counter and on my hands after all the flour was kneeded in. This works like a charm!!! I also oil the bowl that I let it rise in so it falls out nicely.

I've also found that I like to use at least half of the recipe for rolls. I can make 4 dozen with the whole recipe, or 2 dozen and 2 loaves of bread. Just oil your hands to make the rolling easier. YUM! Butter the tops when they are done cooking.
